Day 23: Tuesday, June 19, 2018

DAY 23

Better than yesterday, but still not great. I'm really tired, and my eyes are so bad. I did feel less crave-y than yesterday, though. I'm not sure that those beet chips are a great idea because the pure fact that they're CHIPS (with no other ingredient than beets) make me eat way too many of them.

Psoriasis:
Excellent. I didn't put corticosteroid on my head last night or this morning and I WASN'T ITCHY! The spots on my legs are fading consistently.

Exercise:
None.

Eyesight:
2 out of 5. I booked an eye appointment today. I HATE not being able to see without my glasses.

Headache:
None

Breakfast:
Smoothie bowl: homemade juice (carrots, ginger, lemon, celery - I love my juicer!), 1/2 banana, mixed berries, water, gelatin, Vital Proteins. Topped with a sprinkle of coconut.

Snack:
RCR & strawberries

Lunch:
AIP dill pickle soup with chicken breast

Supper:
AIP dill pickle soup with chicken breast (not feeling too motivated to cook today ;D)

Snack:
Beet chips

Day 22: Monday, June 18, 2018

DAY 22

Sometimes you're so busy prepping food that you don't have a spare 10 minutes to update your blog.. I guess that's not such a negative thing in the grand scheme of things. But! Can I tell you? MY PSORIASIS IS HEALING. I'm gonna switch up the format of my day-to-day (week-to-week?) cause what I've been eating is a whole lot less interesting than what I've been experiencing with my health.

Psoriasis:
My head isn't as itchy. I still have dandruff, but it's not near as bad as it was two weeks ago.
The big spot on my leg is no longer 'active' as my doctor puts it. It will likely scar, but it's not red and angry. It's more pink and... shiny? A few more of my spots are disappearing, too. However, I have a new spot on my spine, and a tiny new one on my left breast. Hmmm. The one on my spine might just be back-ne (back acne? Get it?)

Exercise:
CrossFit this morning. I hate how bad my eyesight is in the morning. I don't want to work out wearing glasses but sometimes it feels necessary.

Eyesight:
2.5 or 3 out of 5. My eyes were so tired all day. When I'm tired, my eyesight is definitely worse. I'm going to book an appoitment with the eye doctor to make sure there's nothing else going on because it's really just my left eye that's affected, and it got really bad when I started getting migraines on my left side a month or so ago.

Headache:
None

Notes:

Sleepy. We camped all weekend, and it was definitely a struggle. When they broke out the marshmallows, I was DYING for one. But I didn't. I want to heal. I want so badly for my body to be healthy. I'm also in my fertile phase, and my fertility signs are WAY more pronounced than usual. Even today's exhaustion I'm pretty sure reflects the hormonal shifts going on in my body.

Breakfast:
Smoothie: 1 banana, 1/4 avocado, mixed berries, water, gelatin, strawberries, Vital Proteins. Topped with a sprinkle of coconut.

Snack: RCR; beet chips from Costco (no other ingredient than beets! They're not delicious but they're a snack that I can handle) and some leftover smoked pork loin from the weekend.

Lunch:
Spinach/arugula salad with homemade caesar dressing, leftover steak, and apple. Also raspberries.

Supper:
Homemade dill pickle soup (AIP) and chicken breast with pan-fried asparagus.

Snack:
Beet chips.

Day 12: Friday, June 8, 2018

DAY 12

Our internet is FINALLY working. Overall, this week was pretty awesome. Since April, I've lost 11 pounds, and just not dragging that extra weight around is really helping my energy levels. I like not having to track calories. I started my period yesterday so I was SUPER hungry and was super hungry again today so I just listened to that hunger. Our bodies are so smart. Except when they go all auto-immune-disease on us. But I forgive you, body. I love you, and I want to heal you!

Breakfast:
Smoothie: 1/2 banana, 1/2 avocado, mixed berries, water, gelatin. Drank this sucker in a mad rush to work.

Snack: RCR that exploded all over me in the staff room. Student: "if you're covered in coffee, won't you be all sticky?" Me: "Well, it's not really coffee, and there's no sugar in it, so it's not sticky..." Student: "Oh, so it's water soluble." Me: "This is Language Arts. Stop with the science, please." Not really. I just nodded and decided I wasn't going to try to figure that one out.

Lunch:
Leftover pancit from last night (cabbage, carrots, pork, shrimp, fish sauce, coconut aminos. SO tasty. This recipe gets a 5/5 from me:

Supper:
I tried a radish salad... I really did... but I couldn't handle it. I just REALLY DON'T LIKE RADISHES. So I made a smoothie bowl instead with mixed berries, spinach, and a bit of coconut milk; I topped it with a bit of coconut flakes.

Later on, I cooked up some uncured bacon and then fried asparagus in the pan fat. Yum.

Snack:
RCR

Exercise:
CrossFit this morning. Even though I had prolotherapy on my shoulder yesterday, I managed to skip!

Eyesight:
Wavered between 3.5 and 4/5 - my eyes were tired and dry all day. I think I have slight seasonal allergies right now.

Psoriasis:
I started the corticosteroid on my head again, and it takes away so much of the itchiness. I hate to think what I'm doing to my skin and what's soaking in to my body, but hopefully it'll keep it at bay until it clears up...

Headache:
None

Notes:

I'm tired today. Getting up at 5:30 to go to the gym sure does take its toll on me. Also, I saw my naturopath yesterday, and he advised me to go back on an immune system booster as well as start taking a probiotic. I am on so many freaking things: probiotic, immune booster, vitamin D (2000 IUs a day), vitamin B, prenatal vitamin, fish oil, gelatin, turmeric... I'm sure I'm missing something there.

Day 8: Monday, June 4, 2018

DAY 8
I set my alarm for 5:30 today to go to the gym. Guess what time I woke up?

5:20! Ten minutes before my alarm. Weird!

Breakfast:
Smoothie bowl: strawberries, banana, mango, gelatin, water. Topped with blueberries and flaked coconut.

Snack: apple & roast chicory root coffee (from hereon in, I'll refer to it as RCR)

Lunch:
Salad: mixed greens, 1/2 tin salmon, cucumber, broccoli, homemade caesar dressing

Supper:
Leftover plantain waffles (even better cold!) with pork carnitas I did up in the slow cooker. Meh recipe... carnitas are supposed to be cooked in lard, and I just cooked it in broth.

Snack:
Chicory root coff

Exercise:
Short bike ride.

Eyesight:
4/5 - didn’t need my glasses again today. My eyesight has dipped as it's gotten later but I'm pretty tired.

Psoriasis:
Same as yesterday.

Headache:
None today again! Yay!

Notes:

Today was just a really great day, and I'm so grateful for the energy I had today.

Sunday, June 3, 2018

Day 7: Sunday, June 3, 2018

DAY 6
I had so much energy today. It might be PMS-related mania, but my entire house is spotless, and even my deck and yard are nice and tidy. And I'm still sick with this head cold!

Breakfast:
Smoothie bowl: kale, swiss chard, strawberries, banana, gelatin. Topped with blueberries and coconut flakes

Snack: watermelon and leftover pork loin

Lunch:
Salad: mixed greens, 1/2 tin salmon, apple, homemade caesar dressing

Supper:
Plantain waffles (I'm not joking... and they weren't half bad. They didn't taste like waffles, and they definitely didn't have the same texture, but they were still SO satisfying) with a bit of maple syrup, and a chicken that I roasted on the BBQ! First time!

Snack:
Chicory root coffee with coconut butter.

Exercise:
Short bike ride.

Eyesight:
4/5 - didn’t need my glasses again today. My eyesight has dipped as it's gotten later but I'm pretty tired.

Psoriasis:
Same as yesterday.

Headache:
None today again! Yay!

Notes:

Today was just a really great day, and I'm so grateful for the energy I had today.

Day 6: Saturday, June 2, 2018

DAY 6
My internet has been down the past couple of days, and this app won’t let me post until I buy the full version...

Breakfast:
Spinach, mushrooms, onion and chicken breast sautéed in olive oil with salt

Lunch:
Berry bowl: banana, blueberries, and strawberries drizzled with melted coconut butter

Supper:
Smoked pork loin (seasonings included pepper which isn’t AIP during the into phase), grilled asparagus and spinach/strawberry salad with homemade dressing. Watermelon, cherries, and bulletproof chicory root coffee for dessert.

Exercise:
Gardened and went for a short walk.

Eyesight:
4/5 - didn’t need my glasses today.

Psoriasis:
The big spot on my leg has lightened up a lot. The smaller spots are about the same. Head isn’t as itchy but is super dandruffy.

Headache:
None today! But I have a horrible head cold.

Notes:
Even though I have a nasty head cold, my energy is relatively high. Doing so much food prep is exhausting, but I signed up for a service called RealPlans which accommodates for many different diet types and provides me with weekly meal plans and shopping lists.

I forgot how much I really do love preparing food and trying out new recipes.

My mother-in-law suggested that perhaps I have an infection from the Monat products I was using. I wouldn’t doubt it as it seemed to be Monat products that started this whole issue. I’ll look into it more.
